Q. Should I put my garlic in the fridge?
A. No! The refrigerator is at just the right temperature and humidity to tell your garlic to start growing. It will sprout in fairly short order if you refrigerate it. You don’t want this to happen.
Q. OK, so if I can’t put it in the fridge, how should I store it?
A. A cool semi-dry place is ideal. Basically if you keep your house cool in the winter with enough humidity to be comfortable, your garlic will be happy. We found our basement to be ideal. It doesn’t get as dry as the rest of the house in the winter and on the whole, it was a bit cooler than the rest of the house. It hung around 55-65°F and 55-65% humidity. We used the last of last year’s garlic in early June (which is exceptional). Your mileage may vary.
Q. What about garlic keepers?
A. Basically the rules from the previous question still apply. We have an unglazed earthenware keeper, that we found is good for the humid end of summer, but then wicks away too much moisture in the winter, prematurely drying out our garlic. Airflow is still a good thing no matter when, so an old onion bag or a basket would do just as well.
